"Louisiana "La-yers" Peeps"

Well folks, I am no Superwoman, that I know for sure. But I do have a Superman behind me giving me a constant push. He is on "vacation" from his regular job, not from work. So much work around here to do. Our garden is late, late. But we have been changing the layout and getting lots of little jobs in there done. The whole garden is about 36ft x 44ft with 12 beds and one really long bed. We finally are getting to the point where we will just be waiting on produce to come in and only have a few big jobs left. Cucumbers are coming in and the rest we are waiting on. It will be nice to have it all set up for fall planting without having to do all this resetting. Peaches, Peaches, Peaches! Any favorite recipes? I think I am going to make some peach rum sauce. I have already made pie filling and peach vinegar. I am excited that the vinegar is actually working! My hibiscus bushes that I planted from seed a few years ago are blooming like crazy now! This afternoon we finally started getting some rain and every bloom from this morning had 2 or 3 of different kinds of bees just hanging out in there together waiting on the weather to pass. I am going to make sure they all got out in the morning. With the way that those blossoms collapse they could get trapped very easily. I am so glad that we FINALLY are getting the rain. It has been dancing around us for days. Literally hearing the thunder a mile away and not a drop here. Perfect time after getting all the gardening work done. We were able to get some extra shelves made today for my canning shelves. It will divide each shelf so it will be 2 instead of just one. Then hubby finished up a little project I started. A little ladder that I started for the young chicks so they could get up to the top of their Egg Hut and get out of the rain. We know that a project or project day is always a success when he bloodies something. This time his thumb, opposite side as last time. Drill bit. Blood on the project. It was a success in all ways. We checked to see if the babies use the ladder and they were all upstairs! Yippee!!! Smart little babies!
Beautiful flowers! I was wondering why you hadn't been online. Thats great to get so much done. We need to revamp our landscape but it can wait till next year. I just want to get our studio done. Then all the pottery supplies and other hobbies can be moved to one location. Hopefully a organized studio.lol Pam

I finally repurposed my metal shelf with green outdoor carpet I found in the woods and used pool noodles to block off the edges so eggs can't fall out. Now, I'm sewing outside camp fabric for curtains. Hope they will stop laying around the property now!!! Driving me crazy, this dang scavenger hunt every day!
 
Love this. All if it. Stunning flowers! I want a bed of hibiscus! Do they do well every year for you? We have many potted but so big and scared to lose them we drag um in during winter lol.

I made a peach sugar jam-basically equal parts sugar/peaches -ok ok a tiny bit less sugar than peaches. Added a squeeze of lemon juice. I cooked and cooled , stirred in a minced cayenne green pepper and spooned cooled mix into a boiled jar then into the fridge overnight because I have no canning equip or stuff called...pictin? Picten? Gelling agent I assume and was desperate to do somethin with a dozen peaches that were due to be eaten now! (added cayenne pepper not too hot I picked them green) I like it, been using it like a chutney and with my rice. Turned out well for my 1st try.


I need to get canning. Total newb. Might as well get my 5 year old going on it too :gig

Hubby has his own line of sauces and rubs in the works. I have very lil time to learn and find find equipment :gig crash canning courses anyone? Point me to simple veggie storage recipes

I do and I love it!  We like to just eat it as a treat.  Really delicious!  I don't cut it on a mandolin like the recipe says.  I cut it all by hand.  Nice thin slices across the grain with a very sharp knife.

Those are the HARDY Hibiscus. In the fall I just cut them back after they die back. Then in spring they come back up from the bottom. If you look at the leaves you will notice that the leaves are a lighter green. They are also very slightly fuzzy and not shiny at all. Now the TROPICAL Hibiscus are the ones that we cannot leave outdoors here in Louisiana. Well you can, but chances are it wouldn't live through the winter. That kind has a much darker green, shiny and smooth leaf.

That Peach Jam sounds delicious! You know you could absolutely freeze a jam like that if it made a lot. That would help to extend freshness of it. I will send you a message that has some info on canning. I have no doubt you can do it.

Your hibiscus are gorgeous! I have a peach and a red one.
 
Prim I might come sooner than the hedge hog hand off. Today I saw some new glazes i have to try. If they carry them at southern pottery I might come next week!


Yea!! Come on, girl. We'll get Angel into it, too. She lives close to me. She goes to work at 1:00 PM. So before that is good. We'll get it worked out. I can't wait.

Hahaha. I thought I was the only one who can identify projects by the blood splats in the garage.
 
My favorite fig jam is with Orange zest, Orange Juice, minced up candied ginger and the chopped up figs, sugar and the pectin to make it gel. I usually just process the figs a bit with the food processor until they are still chunky, but not pureed. It is so yummy!

Jennifer gave me a jar of fig and pear (I think) jam. So delish. When you process the figs do you do it before cooking?
