Mostly Catahoula. He's a Chocolate leopard. He has lighted up a little. He's a lighter brown with chocolate Leopard spots a chocolate eyes. He's a very sweet boy. He stays glued to me everywhere I go.
 
Well, it was bound to happen. One of our ladies decided to hop on the back elevator because she *assumed* it was fixed since there wasn't a sign on it - the one the elevator guys put on it apparently fell off. They just got her off - she got stuck between the 1st & 2nd floors. Luckily had her cell phone so called for help. We now have big big signs on the elevator, just in case you didn't notice the big toolbox on wheels & all of the parts still sitting next to it. There's one in every crowd.

OK about those skunks, about 10 years ago, we had rabies in our area. Nine skunks in all on our road tested rabid. I shot two of them. My cousins had corn planted in our field that year. Late one evening I spotted two skunks ambling along the edge of the corn. I loaded my 12 gauge & walked out there.

When I got closer, instead of running off into the corn, they stopped and turned & started coming directly at me. I tell you true, the hair on the back of my neck stood up! I quickly shot one & then the other. Took a shovel & put them in a box & took them to the LSUA diagnostic lab. Both tested positive for rabies.

A family down the road from us all had to take the rabies vaccine. They found their dog out in the front yard fighting a skunk. They killed the skunk but all of them got exposed to the blood & saliva on the dog. So they all had to take the vaccine.

So be careful. We’ve shot outright or trapped many skunks over the years. They always stink when they’re shot – it releases the stink glands just like it releases the bowels.

Yeah you are right about that, they are some nasty critters in more than one way.

Shrimp Creole: (originally came from some cookbook but I've added some seasonings over the years)

1 bag of shrimp, large or medium-sized, peeled & deveined – I usually use uncooked but I have substituted cooked, just don’t cook it as long.
Cooked rice

1 chopped bell pepper
2 sliced stalks of celery
1 diced onion (or use onion powder to taste)
1 minced clove of garlic (or use garlic powder to taste)
Slap Ya Mama or other Cajun seasoning (I use a couple dashes)
Couple dashes hot sauce
1 bay leaf, crushed
1 tablespoon dried parsley or some fresh minced parsley
1 can tomato sauce + 1 can water or white wine
A couple of drops of Zatarain’s liquid shrimp/crab boil

Saute’ the bell pepper, onion, celery & garlic in a couple tablespoons of butter & olive oil. When it’s soft, add the rest of the seasonings & the tomato sauce & water or wine. Reduce to a simmer for 20 minutes. Rinse the shrimp & add, bring to a boil, reduce back to a simmer for 5 minutes or until shrimp turn pink. Serve over rice. This will serve 2 people with leftovers for lunch the next day. It doubles or triples easily.

A few years ago, I made a huge pot of the base & Jim & his friend Bob froze it & took it out with them to the Albuquerque International Balloon Fiesta – it’s customary for the balloonists & crews to “tailgate party” after the morning competition & serve up samples of foods from their respective parts of the country. People went crazy for it!

I have an alternative recipe – Crawfish Opelousas that I can post also – I won 2nd runnerup in a cooking contest with that one. You can use shrimp in it as well as crawfish.

That's gonna be a really stinky field by the time she gets done skunk shooting! LOL
