Could you post a photo of your EE? Mounting is a dominant behavior, so both hens and roosters will do it. Young chicks will even display the behavior. I can't comment on the wyandotte hen squatting, because I'm not sure if squatting also occurs in dominance driven behavior or not. But a picture will definitely clear things up!

Hens will squat for a rooster, not sure about for a dominant hen, i wouldn't think so, the docile hen would normally seek distance if possible, being crowded in a coop may come to play in this behavior

What we have left to do:
Finish making doors
Add hardware cloth to front and right side, as well as between four pens
Add stabilizing boards on right and left sides
Add tin to back wall
Buy hardware and feeders/waterers

The poor Barred Rocks are molting horribly. The person I bought them from had them in a concrete pen, so it didn't help matters at all. The second hen has pantaloons from her molt, and one girl, not pictured to spare her some dignity, is almost bald headed.

Great photography! One question though....how do you get them to stay so still! ;) I'm headed out to try and get a pic of one of mine which will, undoubtedly, be a partial shot. Lol

That's the hardest part! Lol. I have to take many many photos before getting several good ones. I also had to learn to snap whenever they pause. Some birds are easier than others. The frizzles were hard, because they run from me. The barred rocks were inquisitive and stood very still. The more tame your birds are the easier it will be. Unless they crowd you when they see you. Lol. Some of mine do that, so I throw out some feed so they'll give me some room to take photos.

Any thoughts on him being a roo or not with the behavior from yesterday afternoon?
 
Hmm. It's hard to tell from the photos. If you're using your phone, try to physically catch him at night when he's roosting and use a flash. He probably won't like being handled, but he'll get over it. A close up if his head, as well as his back would help. From what I can see he has a well developed comb, so I'm thinking rooster.

4th picture...Those look like some thick legs! Please keep in mind, that I am still learning and NOT anywhere near even an "intermediate" chicken person...I lean toward roo. HOWEVER, I would listen to the others on here over my opinion. lol...
