Made my famous pickled eggs today.

I take 3-4 jars of pickled beets (any brand, just so they are pickled) add peeled hard boiled eggs ( I also add sliced onions, but that's just me) and set in the fridge for a couple of days.

Pickled eggs are an Easter table must, the kids love the purple eggs.
 
I think it must be a SC thing! I make pickled beets year round, DH loves them. I just get the canned whole beets and make them from "scratch".

They sure are good on a hot summer day.

If you want the recipe, PM me and I'll send it. I love the onions and use whole garlic cloves, too!
