Maple syrup recipes please!

With so much talk about maple syrup and some of us amateurs trying to make our own, as well as some pros, I though it would be a good time to share any favorite recipes using maple syrup! Thanks in advance

Old Fashioned Maple Taffy Pull

2 cups maple syrup
1 cup granulated sugar
1/4 teaspoon baking soda
1 tablespoon butter

boil all ingredients together until brittle when dropped in cold water. remove from heat and pour without scraping on buttered platters. when cool, pull and cut in 1 inch pieces. (children will love to do the pulling!)

yield: 48 pieces

Maple Oatmeal Bars from Stannard's Maple Farm

1 cup sugar
1 cup maple syrup
1 cup oil
2 eggs
2 tsp. vanillia
1 1/3 cup flour
1 1/2 tsp. baking powder
1 tsp. salt
2 cups quick oats
1 cup chocolate chips or raisins, depending on taste


Instructions

Combine sugar, syrup, and oil. Add eggs and vanillia
Sift flour, baking powder, and salt. Add to batter.
Add oats and chocolate chips or raisins.
Bake at 350 degrees for 30 to 35 minutes.
Use a greased 9x13 inch pan
When recipe is cool, cut into squares.
 
Maple Nut Fudge

2 cups fancy or grade a medium amber maple syrup
1/22 cup chopped nuts
1 tablespoon butter

boil syrup to 236*....remove from heat and place in pan of cold water. cool to room temp. stir vigorously until color begins to change, then add nutsmeats. Pour into well buttered 8" or 10" square pan. cut into squares while warm.

yeilds: 16 pieces



Maple Nut Log

2 cups maple syrup
1 cup suagar
1 cup evaporated milk
2 cups chopped nuts

stir maple syrup, sugar, and evaporated milk together in deep saucepan. boil to 238*, stirring contantly. remove from heat, stir in 1 cup shopped nuts. cool mixture enough to handle. grease hands adn form mixture into several logs. roll in remaining chopped nuts and place on greased sheet, cover with wax paper, and chill. slice when cold.

Maple Popcorn

3 quarts popped corn
scat teaspoon salt
1 cup maple syrup
1 cup sugar
2 teaspoons butter

sprinkle salt over popped corn. cook butter, suagar, and syrup to 275* on candy thermometer. pour over popcorn while stirring. spread on a buttered cookie sheet.

Maple Pecan Pie

3 lg Eggs

1/2 cup pure maple syrup

1/2 cup Dk corn syrup

1/2 cup Dk brown sugar

4 Tb unsalted butter, melted

1 tea. real vanilla extract

Grated zest of 1 lemon

1 tea. fresh lemon juice

1 1/2 cups coarsely chopped pecans

1 cup perfect pecan halfs (try to get them all the same size)

1 lg egg beaten with 2 Tb heavy cream, for egg glaze


Wisk together eggs, syrups, and beown sugar. Stir in butter, vanilla, lemon zest,and lemon juice. Fold in chipped pecans.
Pour filling into pie shell. carefully place pecan halfs on pie. Chill untill firm
Heat oven to 375. Brush exposed pastry with egg glaze. Bake for 40 min. or untill knife tip comes out clean. serve warm or cold.
