I did a few of my own, but was averaging about a half an our a bird for skinning and all. I have about 15 more birds and I don't wanna spend an entire weekend working on it.

And I'm not reselling either, so I'm not looking for a certified processor.

Deanna can still help you find a processor. There are several legal custom shops in Maryland.
 
Does the Dept of Ag keep a list of USDA approved rabbit processors?
I am not aware of any USDA approved rabbit slaughter, I believe it is considered exempted meat, like deer or bison. Deanna is the person to speak with since meat and table eggs are her program. I know she does offer a program for on farm slaughter which gives the farm the ability to sell at farmer's markets, to restaurants and schools etc. Her phone is 410-841-5769. I am not sure whether you are looking to process ones you have raised or to buy processed meat, but either way she is the one to talk to.
 
I was actually looking to sell out of a farmer's market and can't find much on what exactly I need to do to be able to do that.

It's actually more a farm store then market.

Deanna Baldwin with the Food Quality Assurance Program has a program that allows you to process and sell. She can direct you to someone who is in her program and also let you know what the laws are regarding processing of your own rabbit or buying meat.

Food Quality Assurance's program will allow you to process on farm and sell at the market. Anyone who is not in the program is not allowed to sell to the public. There are Health Dept laws governing the sales of meat but this program is run in cooperation with the Health Dept and you will be legal to sell to anyone as long as it's not out of state. There are some fees involved and inspections, but my opinion is it's best to do this and have some support if someone should decide to sue you. Also check with your farm insurance, some will raise the rate if your selling meat, but being in this program may also lessen that increase. I doubt any insurance co will cover you if your illegal.
