Matador Mania
1 lb. ground beef
1 med. Onion, chopped
½ cup water
3 Tablespoons chili powder
1 ½ teaspoon salt
1 teaspoon ground cumin
Pepper to taste
1 - 16oz can refried beans
2 8oz jars taco sauce
6 7 inch corn tortillas
1 - 8oz sour cream
1 cup shredded cheddar cheese
Cook ground beef til browned , drain well. Add chopped onion, water, chili powder, salt, cumin and pepper to beef. Cook uncovered about 5 minutes, stirring occasionally. Remove skillet from heat and stir in refried beans, set mixture aside.
Spread about ½ cup taco sauce in a 12x7x2 inch pan. Arrange 2 tortillas on top of sauce, cover with half meat mixture, sour cream and another ½ cup taco sauce. Top with 2 more tortillas, cover with more sauce, remaining meat mixture and half of the cheese. Arrange remaining tortillas, taco sauce and cheese on top. Cover and bake at 350 for 40 minutes. Let stand 5 minutes before serving.
