Mealworm Breeding Project

I recently began a project to breed meal worms as a food/treat/enrichment source for my birds.

Supplies
-3 tier pull out drawer
-meal worms (250, amazon)
-oats for bedding
-carrots/other veggies for food/water
-fine mesh for each layer (separate eggs)

Firstly, I cut out the bottom of 1 of the 3 drawers, and then hot glued the mesh in there. The worms and beetles can't fall through, but eggs can. I filled the top most layer with oats and added carrots, then poured in my worms. I'm going to let these worms all morph into beetles, and switch the other 2 trays that they lay in. I'm new to this, but hopefully it works out.
 
Watching this as I just started my own last week. One thing I've found is the potatoes most recommend to put in with the meal worms dry up quick.....Im using carrots right now but how do you know they are getting enough hydration?
