Meat bird questions!

I have a couple that im keeping. I have some silkies so I'm keeping a silkie Roo, and I'm keeping my beautiful blue laced Wyandotte Roo for the bigger ladies
 
Sounds like now is the time to process them, then! Their growth will be slowing down at this age, so it's not worth growing them for much longer, plus they will continue to harass the hens if they stick around.
 
We process any unsold or uwanted roos at 16 weeks regardless of breed. They've told you right about not expecting the size of store bought. We do about everything with them except fried chicken. Great chicken noodles, smoked/bbq, mexican food, casseroles, etc. Low and slow.
 
Well, we now have 12 scrawny little Roos in the freezer! That was a gross job hahah. I was expecting smaller birds, but was surprised at the complete lack of a breast! They did hve large legs however. We have yet to try one, but they look as though they will be slow and low cooking birds for sure! Thanks for the advise everyone!

Hope you let them 'rest' in the fridge for 2-3 days before freezing to let rigor mortis pass...or the meat will be much tougher.
If you didn't, I think you can let it rest after thawing but before cooking..might want to read up on it.
 
I Let them rest for a day and a half, but I didn't have the fridge space and it warmed up so much outside I couldn't keep them out either. I'll have to let them rest after we thaw them, but I'm kind of thinking that they are going to wind up as stock birds anyhow, just based on the size and toughness of them during slaughter
