Meat Loaf

I have a special meat loaf/bread loaf pan that has 2 pieces for meat loaf. One is for the grease to drain for less fat, I love it!

Whenever Hubby's cousin is over, he is ALWAYS asking for my Corn Bread Meat Loaf. I have to make EXTRAS cuz that boy can eat an entire 2lb meat loaf by himself, that's how much he loves it!
 
My meat loaf is pot luck style, whatever is available in pantry/refrig, but it's always moist and delicious, eaten to the last crumb. I start with 2-3 lbs ground chuck, or substitute one pound with ground pork or turkey if in freezer. To this I add 1 1/4 cups (or a couple handfulls as seems needed) oatmeal or one package of butter crackers smashed with rolling pin. Next come 2 eggs, slightly beaten to break them up, one can Campbell's Beefy Mushroom soup, undiluted, and what ever salsa I have on hand or in place of salsa, some chopped green pepper from the freezer, chopped onion from freezer, and some bbq sauce such as KC Masterpiece. Salt lightly, pepper, garlic to taste. After shaping in pan, I top with bacon, and/or more Beefy Mushroom, or more salsa. It all depends on the day, but it's always a hit! Using the Beefy Mushroom soup in and on top makes this almost soupy, moist, and SO good with mashed potatoes:) ~G No guarantee, I don't "recipe" very often, just add and create.
