One of the staples in our house is egg drop soup. We make it often with vegetable broth, half a brick of ramen noodles, and a couple scallions. We usually have it with a salad or vegetable potstickers.
Meatless chili is also delicious. I make it with navy beans in a bean pot in the oven.
We eat veggie chili at least once a week! You bake your chili like baked beans? That's really neat, I haven't heard of that. It makes sense. I like slow cookers for chili too.
