Meatless recipe exchange

One of the staples in our house is egg drop soup. We make it often with vegetable broth, half a brick of ramen noodles, and a couple scallions. We usually have it with a salad or vegetable potstickers.

Meatless chili is also delicious. I make it with navy beans in a bean pot in the oven.

We eat veggie chili at least once a week! You bake your chili like baked beans? That's really neat, I haven't heard of that. It makes sense. I like slow cookers for chili too.

would love to see some meatless recipes, not a fan of store bought/factory farmed meat. even though it is are main source of meat (sad face). i much rather raise our own food animals or better yet hunt them (deer is awesome eating) but am getting off topic.

i got a book the other day about sausage making and have a chapter on meatless options i think they look quite cook, one was a roasted corn and black bean sausage. think i am going to give it a try soon and will have to share how it turns out :)

Before I knew I was gluten intolerant, I used to make sausage out of "wheat meat" or seitan. It was the fennel that brought the flavor. I have bought soyrizo and seen wheat based vegetarian sausages in the store. Does your recipe use wheat? It sounds very interesting!

Yes, I love my bean pot. It's the perfect size for a pound of beans. I make baked beans and chili in it all the time.

I use whatever recipe, boil dry beans for 45 to 60 mins first and then bake. When I cook I tend to make several meals at once so I often have my dutch oven on the stove, something else in the slowcooker and something in the oven all at once.

I substitute chicken broth for roasted vegetable stock I make at home. I add half a package of these mushrooms to warm stock and let them sit while I cook onions and mushrooms:

If you don't object to butter and cream of course.

ETA I use a whole onion and more garlic because we like it that way.

Thank you! I'm just getting started in rescue work. So far I've been rehabilitating injured chickens. Eventually I'd like to rehab ex battery hens.
 
I made my own vegetarian chili recipe for a slow cooker, and it's great to cook on low all day. Start it in the morning and it'll be ready by dinner!

I use:
1 or 2 can(s) black beans, depends how thick you like it
1 can kidney beans
1 can black eyed peas
1 can chili-ready tomatoes
1 can tomato sauce
1 package of Morningstar Farms crumbles -- like ground beef, but vegetarian
optional: cooked quinoa, I don't recall the measurements from the time I used it, but it thickens up the chili and helps with a meaty texture
note: I don't drain any of the cans of beans for this recipe
Season to taste; I use garlic powder, onion flakes, a little salt and pepper
