So Mare mentioned yesterday she used oats as a binder in hers. I've always used bread crumbs. Anyone tried both? Is there a flavor or texture difference?

For science, of course.

IMO there's a flavor and texture difference between oats and crushed crackers. I've never used breadcrumbs though.
