medicated feed and water = not organic?

I'm trying to find the true definition of organic, in case I want to market the eggs as such. So, if they get medicated feed and water until they go onto table scraps and layer pellets, are they no longer "organic"?

Correct. For your eggs to qualify by the legal definition of organic, the hens must be given certified organic feed from Day 2. Certified organic feed isn't medicated.
