So after I re-home my cockerel, I'll be left with 4 chickens! Is that an ok number or will they straggle to keep warm in the winter months?

No, they each have their own coats.

Did someone say hatch eggs I believe I have hatched a couple and this is currently the amount to eggs I am about to put in the new incubator because the old one has 200 eggs in it and The Hatcher I have has about 100 eggs in it
