ACK!!
I like quite a few vegs, but don't cook them as often as I should....
...not much of a cook and cooking for one get old....easier to heat up something.
I hear that from a lot of people. Just leaves more peas for me. :drool
I have a craving for liver and onions. With a side of peas, of course.

I like to cook but I don't like the clean up part. It's not so much fun for just me.

I hear ya...I try to cook more than just one meal's worth when I do cook,
then I've got 'ready to heat and eat' stuff. Gotta eat good stuff tho or ya just feel lousy.
 
In reality tomorrow I'm making lentil potato soup, not bacon and onion fried rabbit liver with a side of rice and peas. Here's my hacky recipe.

Fry a diced onion in butter or duck fat in pressure cooker until translucent, add a little diced carrot, celery, various culinary mushrooms, diced potatoes maybe garlic and some cumin and cook until flavors combine and celery just starts to cook. Add 1/2 lbs lentils that you pre soaked (not necessary) and just enough beef or duck stock to cover...and any leftover veggies from other odds and ends except kale. DH hates kale and says it's bitter like cabbage (???) Pressure cook for 14 minutes and release naturally.

There, a perfectly delicious meal the kids won't eat.
I think I might also make some bacon and onion sauteed kale tomorrow now that I'm thinking about it, since I'm on a cooking for only myself binge.

Kale is not a good sub for rabbit liver though, in case anyone's wondering. It's just taking up space in the fridge since the night of the Great Kale Rejection this week. Kale kind of reminds me of collards, so we get a long in a southern kind of way even if kale and DH+the boys don't.
 
Oh if you lived close I'd take the kale off your hands for my rabbits.
Hate liver and onions. Every time I was pregnant, my mom would make me eat that crap. But, now I want to make some Borcht (sp) soup. Love that. Since us kids didn't like beets, my mom made another version of it, so that's what I'm going to make, very soon.
