My seven young muscovies are leaving tomorrow. I have a woman who has also asked for the babies from my broody- they are due to hatch in July and she wants all of them. Mama Muscovy is sitting on 25 eggs!!!!

I can't believe no one has jumped on my ad for Isa Browns yet. Last time I sold some I had numerous responses. I'm getting nervous because selling them will get me the money I need at chickenstock. I hate going to places like that with no money!

I'm a little worried too because I still have 6 eggs in an incubator that aren't hatching. They were due Thursday and 8 hatched Wednesday. I candled them last night and they're moving around fine. I don't know how long to wait!! 2 of them are duck eggs and could very well be Muskovie because my daughter mixed the eggs up when I collected them so I'm not sure. The rest are chicken eggs.

Yes you can have the cross! Price is a good home. They have been imprinted by humans but my adult geese toke over as parents

Another great day is well underway and hopefully all is going well for everyone. Later today I will be putting the fresh chickens I bought into string bags and plunging them into an icewater brine solution to spend the night. Brining is crucial to ensuring that the birds stay moist and flavorful when you smoke them. I will be using a solution of kosher salt and maple sugar that will add a great flavor to the finished product. Then tomorrow the day long process of draining, drying, smoking, and cooking begins. It is definitely an all day procedure. To bring the internal temperature from 40 to 180 while never allowing the smoker/oven temperature to rise above 180 is the secret to locking the juices into the bird.

I would advise anyone in the Howell area to avoid Chilson Rd tomorrow. The smell of applewood smoke wafting through the neighborhood may trigger excessive salivating.
