Although I don't believe in Thanksgiving anymore (actually, I thoroughly despise every holiday but Halloween and 4th of July), I want to wish everyone a good time and hope you are safe

It's just my pumpkin bread recipe with cream cheese frosting! But thank you

1 1/2 cup sugar
1/2 cup vegetable or canola oil
2 eggs
3/4 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
Pinch of cloves
1 3/4 cup unbleached flour
1 tsp. baking soda
1 cup pumpkin
1/3 cup water
Nuts if desired

Bake at 350 for 1 hour Makes 1 9 x 5 loaf or just eyeball for 12 cup cakes (my oven is a little uneven so I never know). Top cupcakes with cream cheese frosting. Either homemeade or storebought.
 
Thanks so much for the recipe! I make a similiar recipe for pumpkin cookies and frost with cream cheese frosting. Love em!
Here's my recipe:

Pumpkin Cookies (with cream cheese frosting)

Servings: 24-36 (depending on size)
Oven: 350 degrees

Ingredients:
2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1 tsp pumpkin pie spice
1/2 tsp salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp vanilla extract

1. Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt; set aside.
2. In a medium bowl, cream together the butter and white sugar. Add pumpkin, egg and vanilla to butter mixture and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
3. Bake for 15 to 20 minutes or until centers are set.
4. Cool cookies, then frost with cream cheese frosting.
 
How can you not believe in Thanksgiving when all it is is a day of being thankful for what you have.... I'm sure you are thankful for so many things and most of all the people that love you!
 
I was thinking the same thing as chickflick, how can you not "believe in" Thanksgiving? I can see not believing Christmas or Hanukkah or Kwanza or Easter or Diwali or... any of the holidays with religious and/or cultural roots and significance, but Thanksgiving? The act of giving thanks? I don't get that.

michickenwrangler -- I'm making a cake with your recipe. I doubled it and then divided it in four parts. The last of the four nine inch rounds is baking now. They take about 24 minutes at 325 in my oven.
