Angie, we roasted our turkey with the veggies you suggested -- and two cloves of garlic -- in the bottom of the pan. We marinated the vegetables and garlic in olive oil and poultry seasoning overnight in a gallon plastic bag before putting them in the roasting pan. The turkey gravy from the veggie juice and pan drippings was the most delicious I have ever had.

I am glad you like it. This year I used a mix of veggies and several big apples. The apples gave it a wonderful flavor. Nice change from year to year. Try it next time. Load the carcass belly with quartered apples and onions and garlic and then the pan with the veggie mix and apples.
 
I stuffed our bird (I know, MP!) but I packed veggies in the bottom of the pan. The drippings were rich and plentiful and the gravy was fabulous!
