If I used a silkie hen and a rooster that is barred rock/australorp what the heck would that even turn into?

How do we find the break down of their DNA to understand how that all even works.
 
The offspring would have dark skin and a comb like the mother. They would probably be black, with shoulder leakage. 50% of offspring should be barred. Hard feathers. Medium size. Lightly feathered legs.

Australorp = E/E, i/i, and br/br
Barred Rock = E/E, i/i, and Br/Br.

Offspring Roo = E/E, i/i, and Br/br

E the e-locus gene for extended black. I like to use a colour-by-numbers analogy. The e-locus genes determine the main pattern for where the colours go. Chickens only have two colours. The colours are black (and any variation thereof, including blue, lavender, dominant white, and chocolate) and gold (which can also silver, or diluted gold, or mahogany). Some genes (such as barring) change the pattern by removing colour.

Extended black just happens to make the chicken all black (no gold)

i is the recessive gene that is the counterpart to dominant white. Dominant white replaces black (but not gold) in the colour-by-numbers pattern.

Br is Barring. It's sexlinked, which means that females only carry one copy of the gene. I've written both chickens above as though they're male, since I have no way of knowing which is the father. It doesn't actually matter, in this specific case.

Your silkie is unknown, as you haven't mentioned a colour. However, E is a very dominant gene, so it will conquer whatever genes she has anyway. Pattern will be black. If her gene contribution is not E, (E/? chicks) the dominion may be incomplete, especially on the males, resulting in coloured leakage.
I (dominant white) conquers i, but I is rare in silkies, so we'll ignore it. Chicks should be black, instead of white.
Br is dominant to br. The rooster will randomly give Br to half his offspring, and br to the other half, so half will be barred.
