What would I get if i mixed my bs cock with a ib hen?

Ok first BS is not a color ,but a pattern.

My guess your is a Blue BS X IB =All Blue looking split to BS

If BS isn't a color, then is white a pattern too. What makes the difference if I refer to it as a color or pattern, what's the difference?

The different in color and pattern is you can get all of these colors with different patterns like purple blackshoulder, purple silver pied and so on. White is the only color that will mask all the other colors. When breeding different color pieds if you hatch a white chick it will be what ever color the parents are if they are cameo it will be a white cameo if bronze it will be a white bronze and so on.
