Looks good indeed.
I thought your method was unorthodox indeed, smoking it while it was still frozen, but I learn something new every day.
Can't wait to get my new Cookshack (new to me) smoker and have the capacity to do big slabs.
Speaking of smokers, here is a possible really good deal for anyone in the Canton, Ohio area - a Cookshack Model 66, now called The Amerique - a really top notch rig. It's not mine nor do I know the seller but if you are in the area and want to get into smoking this would be quite a deal. Two days and change left on the auction

I said I would post pics when we started up this new smoker we got. Here is a rack of pork ribs. I used a dry rub and apple wood.

They were good but hubby got scorched....when trying to get more fire going something blew up. Burnt his hand real good....other wise just burnt off hair on forearm, eyelashes, beard, and some of his regular hair.

He could not sleep all night last night so we had to go to ER this am and then did all our chores downtown while out....so we did not go to bed till 1pm today.

I did not feel a thing ;) This was just a bit after putting them on. Thank you!
