Don't want to rain on your parade, but is that galvanized chicken wire your using. I've read much bad health juju about using galvanized material. That's why when welding galvanized it must be well ventilated. I've seen people drop to their knees not able to get up from breathing the toxic zinc vapors. Not that your getting that hot, but heat is what causes it.

My fave when building a new smoker or BBQ is to go the metal recycling places and get the trays out of ovens. Currently paying $.10/lb so as many as I can carry is only a few bucks. Just watch out for the different sizes, make sure they match.

Second fave is expanded metal. Once seasoned properly, there aren't any sticking problems.
