MN Birds... What do I want?

Buff Orpington hens tend to have small combs (at least that's been my experience), so they should be fine.

Chanteclers and Buckeyes are great dual purpose breeds specifically bred for cold climates.

Other good options include Brahmas, Wyandottes, Buff Orpingtons, Easter Eggers, Rocks, and New Hampshires.

What about the hens? Not planning on any roosters right now.

If she does not have too large of comb and tucks her head under her feathers at night, she may be fine. If she lays thought the winter, her comb will be significantly larger than if she did not. So, basically if she is a good winter producer she will suffer more frostbite than a poor producer. For that reason, I stay away from large combs.
