That means I have to mate two chicks from the pairing above, or a rooster son (transfering mottled gene) with mother (red mottled) if i want to produce a red mottled rooster? Am I right?

thats correct. a back cross from son to mother will give you afew red mottled birds. but most will be white, some will be black mottled. you just have to cull hard
