I wouldn't count on getting eggs from a female hinny either. Mine is now 1.7 yrs old and has only laid one egg (before turning a year old) and is was the size of a fairy egg.
Oh and I ended up keeping all three of my 1st Gen babies in the pictures. I just couldn't let them go so I am glad no one answered my request for rehoming.

The concept of Mules won't produce eggs, but a Hinny will baffles me! Our Muscovy girls I mentioned earlier ended up only hatching one egg out of about 9. Which is the ratio I had when I incubated 8-9 eggs and only my one Hinny hatched.
