Welcome to BYC. Once she adjusts to her new home she should settle down. A companion might help with the adjustment. Patience, soft speaking, slow movement and feed should bring her around. As a prey animal she is still thinking that you are planning on eating her.

My twins wouldn't eat at first, but they had speedy and fancy and me to get used too... and they had each other to hang onto when they got scared. The pen that it's in, is it covered? Maybe try covering it with a blanket, cause the dark and quiet actually helps to reduce their stress.
Do you know where she got it from? If a farm/breeder - it depends on how it was raised - the twins were well socialized and knew humans weren't all bad, so it only took a bit for them to get used to me. But fancy spent the first 3 - 4 weeks of his life in terror of humans as the only interaction he had with them was being chased around in a dirty pen and snatched up, then put back down if not chosen. I chose him. But it took him months to get used to me even with speedys help. Blah... I'm gonna go cry myself to sleep now.
