I have to stay up all night to make sure my incubator doesn't stop because it's stormin really bad
 
Since I am very rural, I have my incubators on a non-interrutable power supply with surge protection like you would use for a computer. Our first year we would have power spikes every night and my hubby would have to stay up and make sure the thing didn't go up to 104, or other ridiculous things. After we got the surge protection, it was almost never a problem. Also, many of them have battery backups in them, so they'll keep the power to the unit for an hour or so (especially if it's intermittent) even while the power is off. You may want to look into something like that. You could also consult a local electrician and ask what s/he would recommend, since your incubator is a critical system that needs first priority in the event of a power failure.

One could try using a car battery and a DC to AC converter. I have used them to power big horse clippers and heating pads.
