I was curious with other muscovy owners on the egg yolk. I noticed when I open the eggs to eat that the yolk is sort of hard. So like if I try to scramble it, it's more chunkyish, is this normal? I'm so used to chicken eggs that just scramble easily. Are they missing a nutrient or is this normal for the yolks? I hope this makes sense, it's not like rock hard but just not runny like a chicken egg would be.

I'm not sure about your specific question, but I've read that duck eggs don't fry up well (texture issues), not sure if that also applies to scrambled eggs or not.
 
Yes, this is normal! Most duck egg yolks are firm compared to chicken eggs. I've found that free ranging vs grain feeding also makes them more firm. Nothing wrong with them, just different in texture. but this is what makes them so excellent to bake with! The large yolks keep cakes and baked goods moist!
 
Awesome, thanks, I just wanted to make sure it wasn't that they were missing something in their diet. That's good to know!
