Any idea what weed this is. My chickens, goats and pigs love them and we even have some sheep eating them.

I wish I could convince my chickens to eat it! Mine give me the stink eye if I try to offer it to them, if its not a member of the dandelion family, wood sorrel or clover... I'm weeding it out myself!

Yes, I think there is more in my garden than the intentionally planted stuff. Tasty stuff when picked young.

The young leaves have a lemony taste to me. I would not hesitate to add some to a salad. I just pluck a few and graze on them just like I do with the lettuce and spinach in the garden.

IDK The leaves look broader than the Wikipedia picture. The Lambs Quarters I know of are silvery and feel silkie and fuzzy like their name implies. Down load the app "Picture it" It's free. You take a picture of the plant and it tells you what it is.
