My cockerel doesn't want to be held. He struggle and fights my hands.

When I need to hold a rooster, I grab his legs and hold him upside down for maybe 3-5 seconds, then I right him, keeping a hold of his legs, and put my arm around him to hold his wings down (with the same arm as Im holding his legs.) That leaves me my other hand to inspect him etc...Works very well. Then you can speak kindly to him and get him used to you, and release him down on the ground gently. But I personally do not get the cuddling of chickens thing....

Hmm, I don't have this problem at all with my two cockerels. They're big babies and love to be held!
Maybe you could just slowly show him that being held is a good thing. Just pet him at first, and give him some nice treats. Then you can sit on the ground and coax him into your lap with some food. Gently pet him, but don't hold him. Show him that he is free to go whenever he wants. After a while, you might be able to hold him. But, it's important to remember that not all chickens will want to be held. You can't force him to do something he doesn't want to do.
 
Personally I prefer any intact male animals to keep their distance but behave when I do need to handle them... cockerels usually seem to be the nicest out of the bunch but usually it’s just because they’re bolder than the pullets. Of course, there’s always exceptions to any rule. My cockerel I currently have is the way I like them. He moves out of my space, is respectful to the other birds, but behaves (other than squawking) when I need to handle him for whatever reason. He’s not aggressive but he’s definitely not “friendly” in the way that many of us like our birds to be, and that’s just fine by me. Saves me dealing with misplaced behaviours later, like I had with my imprinted drake. 🤷🏼‍♀️
I wouldn’t try to push him if he’s uncomfortable being held. Some hens hate being handled too. Just hold him when you need to and otherwise enjoy him from a little distance. :)

To each their own. Ours are pets. I dont get the "put clothes on a dog thing" but people still do it.
