My columbians think they are airplanes.. what is up with that?

At first, I thought it was some bizarre chicken mourning/good luck ritual since I first noticed the behavior the day we processed our extra roos.
We let the flock out of the pen (which whey had seldom been confined in during the day since they were 12 weeks old) and some, being worried, wouldn't come out. I felt guilty, and worried... would they ever trust me again? I stood out there with them, talking calmly, not making any sudden movements, just watching them. And then I noticed two of my pullets zooming at high speeds the length of the pen, wings outstretched. No one chasing them, no food in front of them. They zoomed by my silkie boy and turned around and zoomed back. (his reaction was priceless; he puffed up to his rooster stance and looked about wildly for who he needed to fight. He could tell something was happening, he just had too much fluff in his face to see what it was!)Since then, I have observed the behavior on several occasions, but it is only my columbian wyandottes who do it.
What does it mean?
And for that matter, has anyone else observed that different color varieties of the same breed have very different personalities?
 
I have noticed all my birds have their own unique personalities. They even have their own unique sounds. I have a couple that sound like they're wining. I tell them all of the time to "stop their wining". They think every time I come out my back door they are supposed to get some treats. They actually cry.
