My Cornish coss are a little bit on the chewy side.

I processed 30 CX birds and left them in there fridge for 3 day then froze them it worked great. My chickens were 9 weeks old when we killed. They say if you let them go till 12 week then they can become tough. The ones we ate the same night as we butchered were very very tough but in the fridge for 3 days helped a lot no toughness at all and full of flavor.
 
I think the answer was to leave it in the fridge for a few days the first ones we killed on the same night i cooked were very very tough.

I'm glad I read this thread before butchering my flock! It is nice to learn from someone else's pain for once...usually I'm the one providing a case study for the world.

when ever in doubt use pressure cooker lol don't care how tough or old they think they are when I'm hungry their on the menu ate a many old work boot pressure cooker cookem right off the steel toes :-)
 
LOL I think i will skip the shoes with the steel toes and go right for the chickens. Yes pressure cookers are great i use mine for deer meat roast in fact we had it for lunch yesterday. You could cut it with a fork in just 45 min in the pressure cooker. MMMMMM good.
 
yes sir tell you famous recipe but I'll kill you if you tell anyone our side this post lol qart of beer one onion deer roast garlic powder or fresh 14 cup oil presure cook add packet of italian dressin mix it's a powder you buy at store buy long philly steak buns wrap in wax paper microwave few secs to make rubbery break in half/ cut place a few peperchini peppers place top on then pours some juice from peper over top famous italian roast sandwich recipe can also use beef of course I swear buy it it will have people beat n on your door wanting more...... I'm awsome cook people say around here if I had a restuant I put everyone else out of business.. so used to my own cooking I've been disappointed going out to eat everytime .. never happy with my food I order..
