I'd slow roast him like a turkey. To keep him moist and tender, I would recommend using a Reynolds roasting bag. You'll probably need the turkey size.
Take a stick of butter. Put 1/2 in the cavity and take the other 1/2 and mash it on top of the bird. Use a couple of toothpics to hold the bag up and away from the skin and it will brown better.
Then put a can of chicken broth in the bottom (or use your own stock). Roast according to the directions on the roasting bag box.
