I am now on Day 2 of my fermentation experiment. Im using a four bucket/4 day process. Each day i switch the scratch to the next days bucket, add water so that there is an inch excess of the grain, and replenish bucket 1 with new. Day 4 has holes in the bottom and will have a drip pan under it to drain and catch the excess liquid. The day 4 water will be recycled into the process to maintain that good bacteria. I can already smell the "sourness" even after day 1.
