PC I took teh rest of the chicken and made chicken cimichangas!!! with red peppers/green peppers/shredded chedder cheese/onions-rolled in flour tortilla-deep fried-then baked...mixed sour cream with a hot sauce (srirachi) lettuce-bang awesome!!!!! How did you and Jake finish off a whole chicken and I fed 4 people for 2 nights off of my one??? Did you grab yourself a little bird? I was hoping you would grab 4 of the biggest??? You earned it for sure:)

OMG that chicken was good! Just finished and I made 1 extra:) For me for lunch since no one else will touch it-family hates leftovers:-(

Has anyone tried 'brining' chicken? It is awesome! We had a few 8 lb birds from our processing last weekend that we couldn't fit in our bags and we are cooking one right now. It takes a few days because you have to make the brine solution a day ahead and then let the chicken soak in it for a day, but the flavor is just incredible. Check it out if you haven't tried.

Couldn't believe we had at least three 8 lb birds. Gotta love the Freedom Rangers!

I ordered new plucker fingers for my plucker, I'm going to make it work even better!

I always brine mine. After processing they sit in a mild brine for 24 hours before packing and freezing. I've tried stronger brines (1 cup of salt per gallon of water) a few times on chickens and turkeys. It's good.

Yeah, 8 pound Freedom Ranger roos are pretty incredible eh?

Keep us posted on how the fingers work. I noticed that farm you mentioned that sells the shrink bags has them. Those bags look good too.

hows this sound for an idea: my processor suggested putting herbs and/or seasoning in the bag before vacumm sealing and freezing . . . I'm going to try it next time.

Oh, you Brine them before they are frozen! I'm just talking about a brine that you do after you thaw them out or before you cook a fresh one. Either way, brining produces such a flavorful and juicy bird.
