My food won't fit in a box

Tonite's dinner is already made, except for the baking. Cucumber, tomato and yogurt salad, strawberries, a casserole the kids call Cheesy Eggy Goodness, and a homemade apple cake for dessert. The cake is one of my favorites because I don't have to peel the apples.

Tomorrow night is homemade pizza.
 
You guys inspired me. I m rising the dough for pizza tonite.

But yes my kids prefer chicken nuggets and mac n cheese. Once in a while they request ramen noodle soup instead of mac n cheese. But every nite they want nuggets. One day theyll realize how awesome homemade is.
 
I must confess I do use a few packaged stuff, My favorite and DD's is stove top mix which I crush up with a rolling pin and bread chicken or pork with. YUM!

DH grew up in a very strange family. One night a few months ago he told me that I really need to stop cooking so much

After asking him to explain he told me his mom used to make 3-4 boxes of hambuger helper on Monday then put it in the refrigerator and that is what they would eat until it was gone then she would make more boxes

He is always surprised by what I cook because I use the freshest things I can find. We were only able to do a small garden last year so we had to rely on the grocery store all winter for produce but I found one near by that had amazing almost farmer's market fresh veggies. Last night I made spaghetti with a homemade sauce that had chunks of mushrooms and zuccini (one of the many favorites in our house). I try not to do leftovers because I like things to be hot off the stove and cooked by me that day to feed my family. It's just a small way to tell them that I love them. The ducks and chickens often appreciate that because they get any leftover pieces of vegetables I didn't use in my recipes

Deli meats, cheese sandwiches, I had to prepare them.

And homemade veggie beef that today I am going to make minestrone soup out of it. great to recycle one kind of soup into two.
 
I have to admit we're about 1/2 and 1/2. It really depends on our schedules. I usually keep some fast freezer foods for those nights when I'm tired and don't feel like cooking or our schedules are just too hectic. Sometimes, I've just forgotten to take the meat out of the freezer and by the time I get home, it would take too long to defrost. However, last night we enjoyed some panfried pork chops, roasted red potatoes and frozen peas.

Everything on our table was either fresh or canned.
 
I had left over crock pot brisket, mashed taters and steamed asparagus. And while it all came from the grocery store, I did cook it. And the taters didnt come from a box either!
 
Mini pizzas made with tortillas, the toppings were like a Phili Cheesesteak. It was yummy! Oh, I forgot the fresh salad with makings from the garden. Have to confess that the night before was Mcdoubles..we all need a break sometimes. Have a blessed evening
 
Last night dh and I barbequed some steaks and sweet corn. Of course the only time it rained was when we had the grill going!! But it was still yummy!! Tonight is either pasta and salad or turkey and smashed potatoes.
