My hatcher spiked at 225 degrees!!

And it produced some beautiful looking quail!!!

I smoked 21 quail last night, it took 2 1/2 hours of slow cooking and to top them off, i basted them with a honey and orange glaze which is why they are so shiny!! Needless to say i devoured 3 of them and my second oldest son picked one clean, he was the only one awake when they finished!!

It has definitley encouraged me to raise a bunch more quail!!

Ahhh, man I'm so hungry and now all I want is Quail! I keep looking at my breeder full of Button Quail Babies and Thinking, mmmmm, they would make great Popcorn Quail!

I took a bottle of Yoshidas Sweet Terryaki and poured it into a mixing bowl, then i added about 2 tbs of worcestershire sauce and mixed it up. I placed the quail in a seprate bowl and poured the mixture over them and let them set for 20 minutes, rotating the quail to make sure they each received a nice bath. I then set them on the racks in the smoker and let them spend about 15 minutes at 225 degrees to glaze over, then i added the hickory wood chips to start the smoking process. I used a meat thermometer and when the breast meat reached 155-160 degrees i started a saucepan on the stove with honey and orange marmalade mix and ended up basting the quail with this for the last 20 minutes of the cooking process, or until the breast meat reaches 165 degrees.

LOL, Not only are they Buttons, But they are 3 day old Buttons, So yeah, their tiny., Just the right size for a quail version of Popcorn Chicken!

My 7 year old was doing it, until he found his favorite rooster in the slaughter pen, then he just held it, crying, he didnt want to dispatch it..........i waited a bit and told him to go ahead and put it in the top pen of the breeding cages, he was a lucky quail!!!

On a serious note, if you need someone to show you the ropes, i will PM you the next time i visit my mother in CH!!
