Hens can "learn" this bad habit suddenly - that has been my experience.
I then began checking often to try to get the egg before the egg eater got to it. Stay on her like a bird dog on a pheasant

Make sure that the nestbox is clean and in all ways, comfortable. Some folks report that putting a curtain across the nestbox, so that they go in and lay in the dark, has stopped egg-eaters.
Also, make sure she's getting enuf calcium and protein. My hens have free-choice oyster shell and I was giving them rinsed tuna there for awhile, I remember.
There haven't been problems with the current batch except a couple of the pullets had to be taught to lay in the nestbox
. Eggs layed on the floor are in real danger of being eaten.
They can be "unlearned" but not always. Don't let her continue to eat eggs. I'm sure she will teach the bad habit to others. If she doesn't stop it soon, you'll need to stop it permanently
