On the paint question, that humidity will cause havoc with most paints. The inside of this incubator is coated with epoxy resin (I built canoes), which is impervious to water.
The thermometer outside the wiggler ranges from 99.4-101.1. The most important temp is the one inside the wiggler. Luckly, this design keeps it at 99.5. I didn't have anything near that stable on either my cooler or styrofoam incubators.
