This is the incubator I made last summer for my coturnix and bob's eggs.
The incubator is completely computer controlled, the PCB has a microprocessor running software written by me, and I have control over any parameter.

Features:
-Two point temperature measuring;
-LCD + 2 monostable switch + 1 bi-stable switch interface
-Alarm
-PID temperature control, accurate to 1/10 degree
-Automatic egg turning
-Easy to switch egg trays (quail, chicken, turkey, goose, emu eggs)
-104 quail eggs capacity + equal hatcher tray space (up to 6 eggs capacity for emu eggs)

(because the control board is microprocessor controlled it can be used to do almost anything, now that I don't need the incubator I have wrote a software to use it has a Supplemental Light controller to have my quail laying year round, but I haven't physically implemented it yet)

After it was finished I put it to run for 4 months straight, hatching percentage was more than 90% for fifth day fertile eggs, so I'm pleased with it.

Hope it gives you ideas for your own incubator.

Nice incubator, I have never messed with the digital thermostats, I have a wafer thermostat Fridge incubator, and a water heater thermostat cooler incubator, they are both heated by light bulbs. They are both on my page, you should check them out.

This board is designed, printed and soldered by me, it's not exactly a one purpose digital thermostat but it can be turned into a thermostat with the right software like in this example.

I've got the how's and whys basics on my BYC page for using hot water heater thermostats. I like yours but I question having the fans blowing right on the eggs like you have. It's hard to argue with success, though, since you have high hatch rates with it! Nice.
