I worked in bakeries and used proof boxes, as we called them..

this could very well be one, but I have never seen one that well built

I am guessing this came out of their research and developement kitchen..

too bad you couldn't have got all of them..

What a great score! It probably was for raising dough or proofing yeast or some such. I'd love to get my hands on something like that.
