The variety (aka colour) of the bird is mottled. Polish are not recognised in mottled (although somene could have started a project). The silver laced colour that is a recognised variety for polish look very different. These are silver laced polish from feathersite:

The breed is almost certainly houdan. Houdans are very similar in appearance to polish, but they are different breeds.
