He's about 6 months old. I've seen him try to mount a chicken once. ...don't know how many times he's tried it when I'm not out in the run or if he's succeeded with the older hens yet. I'm not seeing any of my girls looking worked over.

My prob is that twice when I was in the run and my back was turned to him while I was filling feeders he flew at me. I didn't get hurt though I did feel his target spot even after it was over. The thing was he's only tried it when I can't see him getting ready for a challenge.

He's otherwise a sweetie. He's easier to handle than the hens! And I want to keep him so how do I handle this behavior and get him to save it for something that's actually threatening one of the birds instead of the proverbial hand that feeds him?

Never turn your back on him so he hasn't a chance to come after you. Move him away, or lock him up, or do whatever you can to not allow this behavior as it will escalate. A rooster should move away and should always give you his back or side. He shouldn't come into your personal space.
