Mystery Quail- Breed and Gender?

I volunteer at a farm, and about a week ago, they had two quail dropped off. They don't know what they are. At least one is a girl because we found an egg. I"ll show size of the egg next to chicken eggs for comparison.
Also, I got to take the egg home- should I scramble it or fry it? Sorry for the bad pictures!

They look like a Breed of Japanese Coturnix Quail.

Female Pharaoh Japanese quail and female Italian/Golden speckled Japanese quail. Quail eggs are good scrambled but you need 5-6 of them to really be satisfied... fried is good too, but the yolks get tough very fast.

Collect and hardboil for about 2 minutes. The membranes on those things are so tough they peel super nice

I don't like hard boiled eggs
We ended up scrambling it.
The membranes on them are WAY harder than I thought!! We had to cut it with a butter knife to get the egg out.

Yes you can pop them open with a knife or they sell egg scissors on amazon and from several quail breeders that come in handy!!!
