I just got an slew of chicks from MM. 8 or so hen PRs and 5 males... they gave me an extra rooster... isn't that nice?

But I was wondering if you can sex them by color? such as a barred rocks head spot. Also, do they vary in color grately? Some are chocolate brown, and some are light brown with dark brown stripe down their back.
 
Nope you get to wait til after they start dropping their juvenille feathering and grow in mature feathers. Note I did not say after they lose down.
In partridge rocks it goes, down, then juvenille feathers, then the sexes become discernable by feather when the MATURE feathers come in. Many breeds don't have a different juvenille phase, partridge breeds do. All juvenilles will have roughly the same feathers regardless of sex. You can however begin - once you're good at it, to tell by comb and tail and progress of feathering in, but it took me about 75 chicks to get good at it.
