In England, people often buy them made with chickens eggs they are very popular, but by making them with quail eggs you can call them mini scotch eggs. Children seem to prefer them to normal scotch eggs and are relished.

Another way I use boiled quail eggs are at Halloween time. Take some ready made cold boiled eggs and cut a thin slice from the thick end of the egg so it stands up straight. Buy some cherry tomatos (small tiny ones) and cut these in half. Scoop out the seeds to leave an empty tomato shell and place these on the pointed end of your boiled egg. Take something like a tooth pick, and dip this in some mayonnaise and place spots on top of the tomato. You can then tell children they are "poison mushrooms" Put them on a bed of lettuce and serve.

i'm gonna try the mini scotch eggs. funny thing about my dh is he loves scrambled eggs, but does not like them anyway else... but take something (practically anything ) and fry it and he's there tongue wagging for more. i just won't tell him about the boiling part until after he eats a few.

he hates sour cream. but put it in cornbread..... he'll eat the crumbs from the pan.

What abuot pickled eggs, what we do is when a jar of pickles is empty (bread and butter) add the pealed boiled eggs, pickle about 2 to 4 day, presto pickled eggs

2 to 4 days is for quail eggs

decided I am going to try the scotch eggs!

How long after cooking them do I serve them? Are they ok to do a day ahead of time?

Hi,

We have them cold in salads etc, but you can eat the hot too.

Yes you can keep them in the fridge for a few days too. Makes an ideal thing to put in hubbys pack lunch box too,lol
