Need favor and recipes!

I have WHAT in my yard? :

We went over and took his recycling container back, got him his mail and now dh is mowing his lawn.

I was also thinking of the extra plate idea, we eat early too (early risers!). DO any of you have any single plate disposable ideas? I mean something that is covered and can be cooked on. I have seen tons of bowls etc, but no plates.

We usually have eggs and some meat for breakfast if there are any leftovers we wrap them in a tortilla and put it in the frig and eat them later in the day as a snack.

You can wrap just about anything in a tortilla and it's good.​
 
Jenn those sound great! That way I could make up a couple of dishes and pre-freeze them for him.

He didn't answer the door today, but I think he may have gone to his daughter's. They don't get on all that well so I am not sure how this will effect their relationship - maybe it'll help!

He is our cross the street neighbor, but since we have ten acres and he has fifteen, across the street is a bit if a hike and we cannot see each others comings and goings.

I am making him some carrot muffins, they freeze well, heat up nicely, and are nutritious breakfasts.... but I would still be interested in recipes of good freezables.
 
This is an easy, but not a really fancy recipe, but every one I have made it for has really liked it. I usually make a double batch so I have dinner for my family as well...

I don't know what to call it other than "MY Mom's Goulash"

Begin to Boil some Noodles (Elbow or Whatever you have)

Brown Altogether or Separately Like I do so I can squeeze the fat out of the burger first:

1 lb. ground beef
Green Pepper, diced
Onion, diced

Add:
1 Big Can Whole Peeled Tomatoes (or DIced Tomatoes)
1-2 cans VEG. BEEF Soup
Beef Bouillon (if you want. I always add about 2-3 cubes for each batch)
Salt & Pepper to Taste

Drain Noodles and Add to Tomato Mixture

You are done!

Can top with cheese and bake or put in Crock Pot, too.
You could separate in freezer bags for your neighbor?

I often freeze the second batch for a later, easy dinner for Sunday.

I bet he would love almost anything homemade! I'd find out if he has any dietary restrictions.
How about meatloaf portioned out with some veggies? Does he have a microwave?
 
I used to make individual freezer meals for my elderly neighbor who was a widower. I realized that quantity was good, so long as it was in small containers. I would make any kind of casserole (mac and cheese, tuna, king ranch etc...) and then just freeze it in single serving portions. He loved it because he had a good quantity of different things to choose from, and it made me happy to know that he was eating well on a regular basis. Hopefully your neighbor has plenty of freezer space and a good appetite!!

edited to add: I think that the "disposable" gladware you get at the grocery store is great for this kind of thing, because it is inexpensive and handy. All he has to do is pop it in the microwave

My husband and I lived in a second floor apt above my elderly grandmother for about five years. We did this so that she could remain in her own home, since she needed limited assistance.

One thing we were concerned about was her napping while she had food on the stove. I started making a double batch of some of the things we were having and would bring down the extra. I would tell her I had made too much for us alone or that I had made enough to share. She was a proud woman and would not have been happy if she thought that we thought her incapable of cooking her own meals. We always gave her enough for several meals so that she could refridgerate her left overs and have different meals each night. She very seldom had to cook any thing but tea, but she was great at nuking leftovers! We did this until she died at 90 years of age.

Helping seniors keep their pride and remain selfsufficient is rewarding. I hope ther will be someone there when I need this kind of assistance.
 
I have been making an extra plate these last few days and am freezing them up for him. He said he didn't want visitors at dinner time and refused an invite to dine with us....

I think I just need to give him time - he was married for 58 years - he must feel like half of himself has been amputated!

Those Hefty plates are MIA, I may have to order them. I am making turkey tettrazini tonight which I can just throw in a bowl to freeze.

Any other suggestions for things we can do?

Oh, I also recommended he get on-line with the gardening forums. He is an expert gardener and is already on-line, but he avoided forums because he didn't need the help. I told him how much help he could be to others who DO need it... Hopefully he'll consider it.

Dhs Gma got involved in a senior support group on-line where they all chatted and checked on each other every day. It did her a world of good. She was 89 when she learned to surf the net and 97 when she died in her backyard trying to split wood! She was a pistol!
