It can happen and unfortunately once shes started, she is unlikely to stop. The other chickens will learn from her too and soon, they will do it. You can stop it by removing the egg immediately from the nest box but I know this isn't always possible. You could quarantine her for a while to see if she stop; this way, she will not pass on the behavior to other chickens and maybe you'll have a chance to get the egg before she eats it. Other members suggest the only way to break a cannibalistic habit is to cull the said chicken... try to discourage it first though. Such a shame to cull. Good luck.
 
I've heard people say that sometimes it's because they need calcium and so add a pan of crushed oyster shell to their pen. Others dry the empty egg shells, crush them and feed them back to the chickens. Either of those things may help.
