Need quick recipes

I know I am not gonna get this right - Trilipix is it. It is used to raise good cholesterol and steady bad. His bad can be raised to a healthy level through diet.

Hamburger Soup

Brown 1 pound of hamburger and toss it in the crockpot.
Add a 46 oz can of V-8
Add whatever veggies you want. Canned, frozen, raw. Add a handful of rice or orzo if you want.

Simmer till you need it.

I used to get it ready the night before and refrigerate the whole mess in the crock pot uh crock.
I would put it on low when I left for work.

Picked up a hot loaf of French bread from Safeway on the way home and it is DONE!

i will have to look into that, tell him I wish him luck, I have been fighting it for 20 years now, at the worst total was 28, at least they are realizing that it has its own set of problems
 
Debi - Here is the Taco Soup - but tell Ken its more like chili thickness wise.

Taco Soup

3/4 to 1 lb ground beef
2 tablespoons onions (dried are OK)
1/4 cup taco sauce
1 8oz can stewed tomatoes
1 8oz Kidney beans, drained and rinsed
1 7 oz can whole kernel corn, drained
1-2 tablespoons chili powder
1/4 teaspoon granulated garlic
6 tablespoons Cheddar Cheese

In large saucepan brown ground beef and onions, (drain if needed)
Add taco sauce, tomatoes, beans, corn, chili powder and garlic; mix well. Bring to a boil, lower heat simmer covered 15-20 minutes. Serve and equally sprinkle with cheese as a topping.

P.S. Sour cream on top is good too if you like it.

Crockpot lasagna is good, too! Just cook the meat, then layer the uncooked noodles, meat sauce, ricotta and cheese like the layers in regular lasagna. Start it in the morning on low, and by the time you get home...voila!

The family also loves the enchilada recipe that peepless posted. We use the same recipe!

Also, what about Hobo Dinners? Patty up a burger, toss in a few carrot sticks, sliced onion, a few potato slices and season, then wrap in foil and stick in a 350 oven for about 30 minutes. Check them, and depending on the thickness, you might be sooner or later on the time.

Mine also love Salisbury Steaks. Hamburger patties, then make a nice brown gravy (you can use the packet) out of the grease, and serve with mashed potatoes.

You can also make thinner patties and bread them, and have Chicken Fried Steak.

We also love Meatloaf. That is easy. If it's just the 2 of you, I saw where you can make them up in muffin cups and do individual meatloafs (meatloaves??) and use as needed. Kind of a neat idea. That would be something he could have for lunch, too. Either cook and freeze or freeze raw.

I love recipesource.com they have a lot of different recipes.

You guys have been a lifesaver. Some of these recipes, I know he will love!!!! I came up with one he really liked:

Browned onion and red and green bell peppers in a little butter, added ground beef and browned it all together, and served it over egg noodles with beef gravy on top. He wanted more, but I only made enough for his 3 servings he eats.
 
Another quick idea is to take sat or sun and brown down all of the ground beef you will use for the week or even 2 weeks.Cool,divide and put in zip lock freezer bags.You can add your seasoning to the ones you will use for taco's etc.Label w/a permanent marker.Store in the freezer,the morning of put the zip lock in the frig.You can also do this with meat loaf or meat balls.Saves time cooking and cleanup on those late nights when everyone is starving. You can cook roast in the slow cooker on the week ends as well,cool and divide up the roasts.Zip lock some for BBQ sandwiches.Just add the BBQ sauce the day you serve.Hope that helps.
